Irish Maid with Riesling
Ingredients:
• 2 ounces Jameson Whiskey
• 1 ounce LaBelle Winery Riesling
• 3 slices of cucumber
• 0.5-ounce Elderflower Liqueur
• 0.75 ounce fresh lemon juice
• 0.75-ounce honey simple syrup
Instructions: In a shaker, drop in two of the cucumber slices and muddle/mash them. Add remaining ingredients and then shake vigorously for 30 seconds. Strain into a rocks glass filled with ice and garnish with a wheel of fresh cucumber, cut beautifully. Enjoy!
Keto/Gluten Free Almond Crackers
Ingredients:
• 16oz Almond Flour, finely ground
• 2 eggs
• Sea Salt to Taste
Instructions: Heat oven to 300 degrees Fahrenheit. Combine ingredients and work into a ball of dough with your hands. Roll out onto a silpat liner or parchment paper thin - no more than 1/4” thick. Add more salt to the top if you desire. Score with a pizza wheel into crackers and poke with a fork. **It is very important to cut before baking** Bake for 45 minutes at 300 degrees Fahrenheit or less depending on how brown and how crisp you want them. The longer they cook, the crispier they will be. Serve with cheese or dip or use as a bread substitute for tuna or egg salad. Variations: Rosemary, everything bagel seasoning, parmesan chili and red pepper flakes
Creamy Veggie Pasta Sauce
Ingredients:
- 1/2 cup carrots, diced
- 1/2 cup vidalia onions, thinly sliced
- 1/2 cup celery, diced
- 1/2 cup bell peppers, chopped
- 2 TBSP Italian Seasoning
- 1 tsp chopped garlic
- 2 cups canned, diced tomatoes
- 1/4 cup chopped sun dried tomatoes in oil
- 2 TBSP jarred pesto
- 1 cup LaBelle Winery Red Alchemy or other red wine
- 2 cups vegetable stock • 1 cup heavy cream
- 1 TBSP butter if desired
Instructions: Add carrots, onion, celery and bell peppers with the Winemaker’s Kitchen Italian Seasoning and garlic to a stock pot on medium heat. Cook until vegetables have sweated out. Add diced tomatoes, sun dried tomatoes and pesto. Stir to mix all together. Add wine, vegetable stock and cook 20 minutes more. Blend all with an immersion blender to make a smooth sauce. Add heavy cream, then cooked pasta of your choice. Add a TBSP of butter and salt if desired. Enjoy!
